  • Sweetener (sugar, agave or maple syrup): Optional

  1. Preheat the oven: Set your oven to 180°C (350°F) and grease or line a muffin tin.

  2. Blend the muffin batter: In a blender, combine the Turtle Porridge, banana, egg, baking soda, cocoa powder, milk, and soaked dates. Blend until smooth and well-combined.

  3. Pour into muffin tin: Divide the batter evenly among 4-6 small muffin cups, and fill each one about 3/4 full.

  4. Bake: Place the muffin tin in the preheated oven and bake until golden and firm (for about 15-18 mins).

  5. Make the raspberry jam: While the muffins bake, simmer the raspberries in a small saucepan over medium heat until softened (about 5-7 minutes). Mash them with a fork and add sweetener if you prefer it sweeter.

  6. Serve: Once the muffins have cooled slightly, pour a spoonful of the raspberry jam over each one.
