Cookie Dough Bark Recipe: A No-Bake Snack with Cocoa Crispies

Here is the third and last recipe of our intern Manon! Say hello to our Cookie Dough Bark: a sweet, crunchy and chocolatey treat using Turtle Cocoa Crispies for extra snap in every bite. Leveled up with a bark-style twist and just the right amount of cocoa crunch, this no-bake recipe is as easy to make as it is irresistible.

Great for sharing or gifting, this treat combines cookie dough flavour with quality ingredients, that nourish as much as they satisfy.

Ingredients

Here’s what you’ll need:

- 130g almond flour
- 1 pinch of salt
- 190g peanut butter
- 85g honey or maple syrup 
- 1 tsp vanilla extract
- 170g dark chocolate
- 30g oat flour
- Turtle Cocoa Crispies (as much as you'd like for the topping!)

Instructions

  1. In a bowl, mix all ingredients except the dark chocolate and Turtle Cocoa Crispies until a dough forms.
  2. Chop 45g of dark chocolate and incorporate it into the mixture.
  3. Roll out the dough between two sheets of parchment paper to about 1 cm thickness.
  4. Melt 135g of dark chocolate. Remove one of the sheets of parchment paper and spread the chocoate on the dough with a spatula. Immediately sprinkle Turtle Cocoa Crispies on top.
  5. Freeze for 1 hour, then slice into squares. It's ready!

- Change the chocolate: Use milk, white, or even ruby chocolate for a different flavour profile. You can also swirl two types of chocolate for a marbled effect!
- Add flavourings/spice: Try other Turtle cereals or even a Turtle granola. Mix in orange zest, cinnamon, vanilla or almond extract to your cookie dough base for depth. For a natural sweetener and to help bind the ingredients together, you can also add agave syrup.
- Control the sweetness: Use cocoa nibs rather than chopping the chocolate for a less sweet, more intense chocolate flavour.
