This easy frozen yoghurt bark recipe is gluten free, naturally coloured and lower in sugar, making it a refreshing summer snack for the whole family. Whether you're looking for a kid-friendly freezer treat, an easy summer dessert or a colourful snack to keep on hand, this recipe is ready in minutes. The star of the show is Turtle Marshmallow Crunchies, bringing playful colour and an irresistible crunch to every bite.

Every piece combines creamy frozen yoghurt, juicy blueberries, naturally rich in antioxidants, soft mini marshmallows and crunchy Turtle Marshmallow Crunchies. It's a refreshing snack that's perfect for hot summer days, after-school treats or sharing with friends and family.

Ingredients (makes one tray, about 8 to 10 pieces)

  • - 500g thick yoghurt (Greek yoghurt, skyr or a plant-based alternative)
  • - 60g Turtle Marshmallow Crunchies
  • - 150g fresh blueberries
  • - 1 tablespoon honey or maple syrup (optional)

How to make it

  1. Spoon the yoghurt into a baking dish and spread it out evenly to about 1.5cm thick.
  2. Scatter over the blueberries, pressing them in gently.
  3. Sprinkle over the Turtle Marshmallow Crunchies and add a drizzle of honey or maple syrup if using.
  4. Freeze for at least 4 hours, until firm all the way through.
  5. Lift the bark out using the parchment, break into pieces and enjoy straight from the freezer.
