This healthy and gluten-free baked oats recipe comes straight from our fellow intern Manon, who created it as the perfect cosy afternoon pick-me-up. It’s soft, naturally sweet, and filled with all the good stuff: ripe bananas, juicy blueberries, and our delicious Turtle Porridge Goji & Chia.

Enjoy this baked oat cake as a healthy breakfast for the week, a sweet bite for weekend brunch, or a healthy snack to pair with your afternoon tea. It's wholesome, easy, and packed with delicious flavour. Bonus: it’s made with ingredients you likely already have in your kitchen.

Refined Sugar-Free & Healthy Banana Blueberry Baked Oats

Ingredients

  • 2 ripe bananas
  • 250ml milk of your choice (start with this and add more as needed)
  • 1 tsp baking powder
  • 120g frozen blueberries, microwaved with 1 tsp sweetener (maple syrup, honey, or sugar)
  • 6 tbsp Greek-style vanilla yogurt
  • 60g oat flour (blended Turtle Gluten-Free Rolled Oats)
  • 200g Turtle Porridge Goji & Chia
  • Optional: A drizzle of Turtle peanut butter for serving

Instructions

  1. Mash the bananas in a large bowl. Add the Turtle Porridge Goji & Chia, oat flour, baking powder, and milk. Mix until smooth and well combined.
  2. Grease and flour a cake tray or baking dish, then pour the mixture into it.
  3. In a separate bowl, microwave your blueberries with a teaspoon of sweetener until soft and jammy.
  4. Spoon 6 tablespoons of the blueberry mix over the batter, followed by 6 tablespoons of yogurt.
  5. Gently swirl the toppings into the batter.
  6. Bake in a preheated oven at 180°C for 35–45 minutes, or until golden and set.
  7. Let it cool slightly, then slice and serve. For extra richness, top with a spoonful of Turtle peanut butter.
