Gluten-Free & Refined Sugar-Free Banana Blueberry Baked Oats
Ingredients
- 2 ripe bananas
- 250ml milk of your choice (start with this and add more as needed)
- 1 tsp baking powder
- 120g frozen blueberries, microwaved with 1 tsp sweetener (maple syrup, honey, or sugar)
- 6 tbsp Greek-style vanilla yogurt
- 60g oat flour (blended Turtle Gluten-Free Rolled Oats)
- 200g Turtle Porridge Goji & Chia
- Optional: A drizzle of Turtle peanut butter for serving
Instructions
- Mash the bananas in a large bowl. Add the Turtle Porridge Goji & Chia, oat flour, baking powder, and milk. Mix until smooth and well combined.
- Grease and flour a cake tray or baking dish, then pour the mixture into it.
- In a separate bowl, microwave your blueberries with a teaspoon of sweetener until soft and jammy.
- Spoon 6 tablespoons of the blueberry mix over the batter, followed by 6 tablespoons of yogurt.
- Gently swirl the toppings into the batter.
- Bake in a preheated oven at 180°C for 35–45 minutes, or until golden and set.
- Let it cool slightly, then slice and serve. For extra richness, top with a spoonful of Turtle peanut butter.
