Ingredients (8 small cupcakes)

  • 125ml milk (dairy or plant-based)
  • 1 egg
  • 1 banana
  • 1 tsp baking powder
  • 1 tbsp peanut butter
  • 1 tbsp syrup (maple syrup or honey)
  • a pinch of salt

For the presentation:

  • 1-2 tbsp yoghurt
  • A handful of berries (raspberries or blueberries)

Instructions

  1. Blend the ingredients: In a blender, combine all the cupcake ingredients. Blend until smooth.

  2. Start baking: Pour the blended mixture into small, oven-safe ramekins. We used heart-shaped ramekins for some cuteness! Bake in a preheated oven at 180°C (350°F) for 10-12 minutes. The cupcakes should rise slightly and be firm to the touch when done.

  3. Presentation is key: To make them even cuter, spread some yoghurt on a plate. Place your warm cupcake on top and garnish with fresh fruit like raspberries or blueberries.
