Chocolate Florentines with Nuts and Seeds Granola
Chewy, chocolatey, and just the right amount of fancy! Our fellow intern Manon gave the classic Florentines recipe her own twist by using Turtle Power Granola Nuts & Seeds for an extra layer of nutrition and deliciousness. Think oven-toasted nuts and seeds, gooey honey caramel, and rich dark chocolate. All in one irresistible bite!
Perfect with a coffee, great for gifting, and dangerously good straight from the fridge. They’re the kind of treat that feels indulgent but is made with real, wholesome ingredients you can feel good about.
Let’s get into the recipe!

Ingredients
Here’s what you’ll need to make about 10-12 Florentines:
- 100g sliced almonds
- 50g Turtle Power Granola Nuts & Seeds
- 100g dark chocolate (melted)
- 70g cream (liquid)
- 50g honey
- 90g sugar
Instructions
- Preheat your oven to 180°C (350°F).
- In a saucepan, combine sugar, honey, and cream over low heat. Stir gently until the mixture thickens and turns golden (about 5 minutes). Use a thermometer if you have one, heating until it reaches 118°C.
- Remove from heat and stir in sliced almonds and Turtle Power Granola Nuts & Seeds. Mix until evenly coated.
- Spoon the mixture into silicone molds. If you don’t have molds, place small spoonfuls onto a baking sheet lined with oiled parchment paper.
- Bake for 10-15 minutes until golden and bubbling. Let cool before removing from molds or tray.
- Melt the chocolate and pour a thin layer into the base of the molds (or onto parchment).
- Place each almond cluster on top of the chocolate layer and gently press.
- Chill in the fridge until firm, then unmold and enjoy!
