Ingredients:
- 200g Turtle Granola Walnut & Chocolate
- 2 tbsp of peanut butter
- 60g dark chocolate
- Agave syrup, honey, or sweetener of choice (optional)
Preparation:
- Line a cupcake tray with paper liners or use silicone cupcake molds.
- In a bowl, mix the Turtle Granola Walnut & Chocolate with the peanut butter and the optional sweetener until well combined.
- Break the chocolate into smaller pieces. You could also use chocolate chips. Add the chocolate into a small microwave-safe ramekin. Microwave the chocolate at 30-second intervals. Stir occasionally until smooth.
- Evenly distribute the granola mixture into the cupcake liners, pressing it down gently to get an even base.
- Spread a layer of the melted chocolate on top of each cupcake.
- Place the cupcakes in the refrigerator for about 30-60 minutes, or until the chocolate layer hardens.
