  1. Line a cupcake tray with paper liners or use silicone cupcake molds.
  2. In a bowl, mix the Turtle Granola Walnut & Chocolate with the peanut butter and the optional sweetener until well combined.
  3. Break the chocolate into smaller pieces. You could also use chocolate chips. Add the chocolate into a small microwave-safe ramekin. Microwave the chocolate at 30-second intervals. Stir occasionally until smooth.
  4. Evenly distribute the granola mixture into the cupcake liners, pressing it down gently to get an even base.
  5. Spread a layer of the melted chocolate on top of each cupcake.
  6. Place the cupcakes in the refrigerator for about 30-60 minutes, or until the chocolate layer hardens.
